Nelin Guzman Parainema Honduras is the rare coffee that earns the description "spiced" without losing any of its brightness. From the lush highlands of Santa Bárbara on Honduras's western side, Nelin Yovani Guzman Muñoz produced this anaerobic natural at his farm Los Zorzales — fermenting whole cherry for 72 hours before slow-drying in a solar dryer for up to 20 days. The result is a cup that starts tropical and playful — pineapple and cherry cola right up front — and resolves into something more intriguing through the finish: a cracked peppercorn spice and an herbal, botanical undertone that gives the cup a long and memorable close. This is a dynamic coffee that punches above its weight across every brew method you put it through.
