Deep Purple Finca Deborah Bourbon Panama is one of those coffees that needs no convincing — it speaks for itself from the first sip. Grown at nearly 2,000 MASL on the biodynamic Finca Deborah estate in Volcán, Panama, this Red Bourbon lot undergoes the farm's signature "Purple Natural" processing: an extended anaerobic fermentation that concentrates fruit and florals into something almost wine-like in its complexity. Tropical fruits burst up front — mango, passionfruit, and mandarin — followed by a brown sugar sweetness that keeps the cup syrupy and full without ever crossing into cloying. The finish is vibrant and clean, with a lingering citrus brightness that pulls you back to the cup. Finca Deborah releases very limited quantities of this lot each year, and it sells out fast.
